Healthy Fruit Smoothie Recipe

  • 1 cup plain flavored fat free yogurt
  • ½ cup crushed ice
  • 1 cup unsweetened apple juice
  • ½ cup watermelon, cut into small cubes

  • ½ cup mango, cut into small cubes
  • ½ cup peaches, cut into small cubes
  • 1 tsp. vanilla extract
  • ¼ cup honey
  • ¼ cup almonds, crushed


  • Fat free cool whip
  • Couple sprigs fresh mint

To Make:

Frozen fruit may be substituted for this recipe, however fresh fruit will provide the best taste for these smoothies.

Before making your smoothie, cut up the watermelon, strawberries, mango, and peaches according to the directions listed above. Then, in a small bowl, combine all the fruit pieces and the honey together.

Make sure all the pieces are covered by the honey. Let fruit mixture chill in refrigerator for at least half an hour. Remove the fruit bowl from the refrigerator and let it stand for 10 minutes. Combine the fat free yogurt, apple juice, and crushed ice into a blender.

Blend this mixture for less than one minute before adding the fruit. Add the fruit and honey mixture to the liquid in the blender. Add vanilla and blend on high until all the fruit is mixed well.

Remove blender from the base and pour smoothie mixture into tall milkshake glasses. Top off each of the smoothies with a dollop of fat free cool whip. Then sprinkle crushed almonds on top of the cool whip.

A sprig of mint on the side of the glass completes this refreshing, healthy smoothie. This recipe is for two servings.

The following smoothie recipe has almonds and chocolate. It has 0 grams of sugar. It may have 20 grams of carbs but 9 of those are from fiber which pass right through your body. It has no fructose which is the worst sugar.

If you are looking to lose weight then consuming less carbs then you do now is a huge step in the right direction. I don't personally recommend going super low carb at under 50 grams per day but you may want to try it for a few weeks. I personally stay in the 100 to 150 grams of carbs a day range easily without ever thinking about what I eat. I don't have weight to lose but I would love to lose body fat while gaining muscle to help lean out more.

  • 2 TBSP Avocado

What exactly makes this smoothie low carb?

About 17% of the calorie count is from carbs. Nine out of 20 grams of carbs come from fiber. Our body does not digest fiber. When the carb percentage is in the 10-15% range I will look at the fiber content and then decide if is low carb or not. This on qualifies.

If you are not a fan of stevia then adding a quarter of a small banana should do the trick. This will only add about 5 grams of carbs which is not much.

I buy store bought almond milk but homemade is always best if you do not add any sweeteners to it. If you do not have any almond butter on hand then feel free to sub any other nut or seed butter. Adding cacao nibs at the end will give the smoothie a nice crunch. The avocado is added for smoothness.

Put the strawberries, lemon juice and lemon peel into your Ninja Blender 1100. Blend at high speed for 20 seconds or until it gets smooth. Turn down the speed to low and remove the blender's cover. Add the condensed milk in a regular stream into this mixture. Finally, remove the strawberry mixture by folding it onto whipped cream. To make into hard ice cream, allow it to sit in the freezer for 4 hours.

Low-calorie Version

Home-Made Chicken Nuggets Recipe

Why should anyone bother to make their own Chicken Nuggets, when they can buy them conveniently ready made? Even ready cooked as a fast food take-away. Well, chicken is usually a meat that most kids will eat and for some reason a coating of breadcrumbs makes it even more appealing. If you are concerned with what goes into processed and ready packaged food in the way of preservatives and additives though, you might like to produce your own chicken nuggets for those occasions when your children demand comfort food. These home-made chicken nuggets taste much nicer than bought ones and you know exactly what's in them - that there are no unwanted preservatives, that it really is chicken, if you have a source of affordable organic chicken you can use that and they will also be really fresh.

The preparation time isn't that long, about ten minutes, but the chicken nuggets cook crispier if they have a little drying time in the fridge before frying (yes I did say frying, let's live dangerously on one dietary front!) so the first stage can be done up to two hours before cooking, when you have ten minutes to spare. After that the cooking time is very quick. The quality of the breadcrumbs does make a difference. Fresh, slightly dry, crumbs are definitely better than those powdery packets of 'golden' crumbs that you can buy. On the occasions when I'm being a zealous and organised mother, I whizz up stale (but not mouldy) white bread in the food processor and keep a freezer bag full in the freezer. Hopefully that will last until the next bout of housewifeliness hits me. If you don't have a ready prepared stash of crumbs, whizz up a white roll from the freezer to make crumbs and spread them on a plate to dry slightly.

Chicken Nuggets Recipe

450g/1lb Chicken breast fillets

30g/1oz plain flour

¼ teaspoon Chicken spice mix (optional or substitute your favourite spice)

¼ teaspoon salt

1 egg

3-4 handfuls of breadcrumbs

These quantities are a rough guide, increase or reduce them according to how much chicken you want to cook.

Cut the chicken into bite sized pieces. Get four bowls or plates. The first for the sieved flour with mixed in a pinch of chicken spice, salt and pepper. The second for the egg, beaten with a pinch of salt and half a tablespoon water or vegetable oil. The third for the breadcrumbs. The last is to put the finished nuggets on.

Dip each piece of chicken, first in the flour mix so it is coated, shake off any excess. Next into the egg and lastly roll it in the breadcrumbs before laying it on the plate to dry. As you work through all the pieces your fingers will get a thick coating on too, resembling chicken nuggets themselves. When all the chicken pieces are coated put the plate uncovered in the fridge to dry and crisp up a bit. This can be for as little as ten minutes but an hour or two is better.
To cook, heat up approx 3 tablespoons sunflower / vegetable oil in a wide frying pan. When hot add as many nuggets as will fit without crowding. Turn when golden on one side. When all sides are cooked remove onto kitchen paper to drain off some oil. As soon as they are all cooked serve while hot.

You could do the same thing with strips of fish to make your own fish fingers and gain the supermom of the year award! Having said that you do need to have something ready-made as a standby in the freezer for those days when cooking supper is too much and bought fish fingers have that slot in our house.

Stuffed Milkfish (Rellenong Bangus) Recipe

Milkfish, or bangus as it is locally called here in the Philippines is our national fish. This fish is one of the many staple diets by filipinos although milkfish is wide spread in south east asia. Countries like Indonesia and Taiwan have milkfish also in their diet. To describe this fish, the scales are bright silver. Slender body and the largest I've seen is about two feet. They thrive either in fresh water lakes, brackish water and salt water.

When cooked, the flesh is white as milk ( that is why it called milkfish ) and lots of needle like fish bone on it's flesh. Wide spread throughout the islands but the most tasty ones comes from Dagupan ( northern part of Luzon, Philippines ). There are many milkfish recipes available and stuffed milkfish or rellenong bangus is one of the best.


If you are now ready, here is the recipe:

Stuffed Milkfish ( Rellenong Bangus ) Recipe

1 large sized bangus ( milkfish )

1 onion, chopped finely

4 cloves garlic, minced

1 small sized carrot, small cubes

1 box raisins ( optional )

2 tomatoes, chopped

1 raw egg, large

1 tsp. Vetsin ( monosodium glutamate )

1 tsp. Salt

½ tsp. Worcestershire sauce

1 green bell pepper, chopped finely

2 tbsp. Flour

cooking oil for frying

*Scrape fish scales. Clean. Gently pound fish to loosen meat from the skin. Use flat side of a knife in pounding.

*Break the big bone at the nape and on the tail. Insert the end of the handle of an aluminum kitchen turner (sandok) through the fish neck.

*Gently scrape down the handle between the meat and the skin. Scrape down to the tail, going around and on the other side of the fish.

*If you feel the meat is entirely separated from the skin, remove the handle, squeeze and push out meat (with the big bone), starting from the tail going out through the head. This way, you will be able to push out the whole meat without cutting an opening on the skin.

*Marinate skin and head of fish with soy sauce and calamansi ( lime ) juice. Set aside. Boil fish meat in a little water. Drain. Pick out bones. Flake meat.

*Saute garlic until brown. Add onion and tomatoes. Stir in fish meat, carrot, and pepper. Season with salt, vetsin, ground pepper, and Worcestershire sauce. Add raisins.

*Transfer cooked mixture to a plate. Cook, then, add raw egg and flour. Fill in mixture in bangus skin. Wrap bangus in wilted banana leaves or in aluminum foil. Fry. Cool before slicing.

*Garnish with sliced fresh tomato, spring onions or parsley. Serve with catsup.
