Ayurveda - Recipes For Three Doshas

According to Ayurveda, the three Doshas are mainly responsible for the proper functioning of the human organism. The imbalance within these three Doshas causes various kinds of diseases and discomfort in the body. However, when there three Doshas Vata, Pitta and Kapha remain undisturbed in their respective organs they maintain a proper balance.

1- Kicharee- This particular Ayurvedic recipe, which is a basic mixture of lentil and rice, is a porridge kind of food that balances all the Doshas.

Ingredients:

Required items-

2 Cups White Basmati rice
Cups Split Mung dal (yellow)
2 TBS. Ghee (clarified butter)
1 inch Fresh ginger root
1 small handful of cilantro leaves
1/2 tsp. Salt (rock salt is best)
1 pinch Hing (also called Asafoetida)
1/2 tsp. Turmeric
1/2 tsp. Coriander powder
1 tsp. Whole cumin seeds
1/2 tsp. Mustard seeds
5 to 7 cups of Water depending upon the consistency desired, climate and the type of vessel used.
Directions:
Wash the lentil and rice together. In a heated a pan on add Ghee (clarified butter), pour in the mustard seeds, coriander powder, Turmeric, Hing, and whole cumin seeds. Stir all of the ingredients together. Add rice, lentils and stir again. Now add the water, salt and boil the concoction. Simmer the preparation in low heat, with the lid on the vessel, continue cooking till both the lentil and rice become soft and are intermingled. The cilantro leaves are to be added before serving.

2- Yellow Mung Dal Soup

Ingredients required:

1 Cup of Yellow split Mung dal ( yellow lentil)
6 Cups of Water
1/2 tsp. of Black mustard seeds
1 tsp. of whole cumin seeds
2 tBS. of Ghee (clarified butter)
1 pinch of Hing
2 TBS. Chopped fresh cilantro leaves
1/2 tsp. Rock salt
1/2 tsp. Ground coriander seeds

Directions:
Wash the Mung dal. Heat a pot on medium heat, add the dal and water together in the pot. Cook for 30 minutes. Stir the mixture occasionally to prevent burning and becoming sticky. Add Ghee to another pan and heat at medium heat. When it melts add the spices. Now add the spiced Ghee mix to the soup. Garnish with freshly chopped cilantro leaves. Add salt to taste.
